This is a basic, but oh so yummy casserole my daughter and I made today after church. It is almost like a Tortilla Soup.
9×13 pan. I line in with Reynolds wrap non-stick aluminum foil
1 small onion, chopped
1 large can Cream of Chicken Soup
1 large jar of Salsa Verde
3 cans Kirkland (Costco) Roast Beef
10 soft tortillas cut up in to bite-size pieces
about 3 cups of Mexican Cheese
Mix soup, salsa and onion in bowl. Add beef and mix. Layer soup, tortillas and cheese. Makes about 3 layers.
Cover with foil and bake at 375 for 45 minutes.
Ours was more like a soup, but is was spicy and cheesy good!
