The Frog Princess and Beignets

The other day our sweet exchange student who loves everything Disney wanted to make a recipe from the Disney movie The Frog Princess. I have never seen the movie and we were having quiet a language barrier.

We went to my oldest daughter (so glad she is home by the way!) for translation help and also a lover of Disney. It took her 30 seconds to figure it out. Beignets!

I looked up the recipe and found one that does not require yeast. I do not  work well with yeast, especially in the winter when the house is cold.

The Beignets turned out wonderful. Here is the recipe and and I took a few photos.

Ingredients:

  • ½ cup butter
  • 1 cup water
  • ¼ teaspoon salt
  • 1 cup all-purpose flour
  • 1 teaspoon vanilla
  • 4 eggs
  • Oil for deep frying
  • 3 tablespoons confectioners’ sugar

Preparation:

In a medium saucepan, melt the butter in the water. In another bowl add salt and flour. Add the melted butter water mixture to bowl and stir until a sticky batter is formed. Beat in vanilla. Beat in the eggs, one at a time, until the batter is smooth.

Heat the oil to 375F. Fry mounded teaspoons of dough, several at a time, for about 4 minutes. They are done when they are light, golden brown on each side. Drain them for a few minutes on a clean kitchen towel and serve warm, dusted with the confectioners’ sugar.

This beignets recipe makes 28 to 32 fritters.

Dearest is Home and Jane Austen

Our daughter’s plane finally arrived at the air port amidst a terrible storm in the wee hours of the morning. Alisha was to have a layover in Dallas, but her first plane was fairly late and had to take a slightly different flight route because of nasty weather across Arkansas. She had just enough time to grab a bite to eat in Dallas and then begin loading. The plane pulled away from the gate and  taxied around for close to 20 min. before take off. Her DVD player died during Pride and Prejudice on this flight just as  Jane was riding the horse to visit Mr. Bingley and his sister. She was not happy. This flight was suppose to only take three and half hours on a good and got an extra hour added to that.

I had wanted to take a photo of her, Alex and Amanda when she got off the people mover train, but the poor thing was so tired and disheveled, I did not do it.

Below are a few photos from Alisha leaving at the air port, then in Tn with her boyfriend. She had a wonderful, but we are oh so happy to have her home.
